Mornings in the summer means waking up to fresh, fragrant ingredients for breakfast.  Add whole milk or greek yogurt with pumpkin seeds, and you got yourself with enough protein to start your day off on the right footing.  

Summer here in our home means we are showered with an abundance of ripe, ready to burst plums.  It’s often a scramble to figure out the best ways to celebrate the fragrant, sweet plums in such a short amount of time.  But luckily, we’ve got no shortage of sweet ideas for those juicy plums.  

This Plum Yogurt Parfait with Crushed Pumpkin Seeds is a summer delight – and beauty.  Have it as a snack or for breakfast.  Either way, it’s loaded with flavor and good, nutritious stuff for ya.  

With the sweet juices of the plums and the tartness from their skin, this is a naturally sweetened dish.  There’s no need for any additional sugar or sweetness in this yogurt parfait.  Sprinkle on the crushed pumpkin seeds or leave them whole, and you’ve got a protein and nutrition-packed crunch to whip together into each bite of this yogurt.  

This recipe was made using ingredients grown from our very own garden where we grow our food regeneratively.  Nothing beats these fresh, amazing fragrances and flavors grown right at home.

Recipe Notes

TOTAL TIME: 10 minutes.  This is easy, whipped up goodness.  

SERVES: 1 — but times by however many may want to join

EQUIPMENT: A spoon and a bowl.  

Ingredients

Only 3 simple, whole ingredient for this Plum Yogurt Parfait with Crushed Pumpkin Seeds:

  • Yogurt – 1 cup.  Whole milk or Greek yogurt preferred, for more protein and more healthy fats promoting a good satiety.
  • Plums – 2-4, depending on the size of your plum variety and how plummy you’re feeling (our variety is on the tiny side – a little bigger than cherries – so we went for 3 here).  Sliced and pitted.  Peel off the skin if you don’t like the sour tartness.  NOTE: for the juiciest, sweetest, and most fragrant plums, wait until they are plump.  
  • Pumkin Seeds – 1/4 cup, crushed.  Raw or roasted.  But definitely UNSALTED.  Crush or leave whole, depending on the kind of texture you’re in the mood for.  I like to give mine a rough chop on the cutting board to make for an easy sprinkle and more even and delicate texture throughout.

Instructions

Not all parfaits require layering.  Well, okay.  layers is in the definition.   But the easiest and equally visually appealing way to make this Plum Yogurt Parfait with Crushed Pumpkin Seeds is to simply make a bowl out of it. 

To make a bowl of it, just grab your bowl, a spoon, and dole out that yogurt, slice that plum, and sprinkle that pumpkin seed.  But there is a bit of an order of operation to maximize on that coldness of that yogurt (who wants room temperature yogurt while slicing and chopping?!) 

  • Slice the plums.  (I slice around the pit from the top-down to avoid mushing the plums).  Set aside.  
  • Pour our pumkin seeds.  Leave whole or give a rough chop.  
  • Grab bowl
  • Grab spoon
  • Scoop yogurt.  Splat in bowl.  
  • Drop in sliced plums
  • Sprinkle in crushed pumpkin seeds.  

To make a parfait, prepare the plums and pumpkin seeds, and then simply layer on the seeds with the plum slices into the parfait container or clear cup, add the layer of yogurt, then keep alternating until you reach the top, making sure to sprinkle a few more plum slices and crushed pumpkin seeds on top.

Kitchen Notes

This Plum Yogurt Parfait with Crushed Pumpkin Seeds is a sweet summer delight.  Have it for breakfast or as a healthy snack.  It’s super simple and quick to whip up.  Here’s some more quick tid bits to know:

  • Wait until the plums are ripe and super plump, practically about to bruise at the touch, for the sweetest and most fragrant plums.  The sweetness and fragrance creates the perfect balance with the tartness of the skin and the yogurt itself.  
  • Plums come in different sizes!  Our variety is on the smaller size, so we use a few more for our yogurt snack.  
  • Pumpkin Seeds – Make sure to get the unsalted ones!!  Raw or roasted, is fine.  Just no salt!  
  • Go with the whole milk or Greek yogurt options.  Whole milk and greek yogurt options offer more protein and healthy fats to stretch out that satiety.  Watch out for sugar content, as well, as some greek yogurts add additional sugar.  The less, the better.  (source: UChicago Med)
